This should be the Last one of theirs we&#8217;re adopting.<\/p>\n<p>So I forgot that Ryan is off for a small trip at the end of the week so in lue of a stew recipe you get Quesadillas! Maybe another Recipe in a little bit.<\/p>\n<p>tsp = teaspoon<\/p>\n<p>Tbsp = Tablespoon<\/p>\n<p>lbs = Pounds<\/p>\n<p>Mince = chop into very small pieces<\/p>\n<p>Diced = You chop the thing into roughly square like shapes<\/p>\n<p>Saute = cook with oil<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 (15 oz.) can black beans<\/li>\n<li>1 cup frozen corn kernels<\/li>\n<li>\u00bd small red onion &#8211; Diced<\/li>\n<li>1 clove garlic &#8211; Ryan didn&#8217;t like chopped Garlic so this is up to you<\/li>\n<li>\u00bc bunch fresh cilantro &#8211; Chopped (Honestly while fresh is better, if you have dried stuff and you like it, use it)<\/li>\n<li>2 cups shredded cheese &#8211; you can buy or grate your own cheese<\/li>\n<li>10 taco-sized [Medium-sized] tortillas &#8211; Make sure they&#8217;re cooked<\/li>\n<\/ul>\n<p>Necessary Equipment<\/p>\n<ul>\n<li>Large Bowl<\/li>\n<li>Cheese Grater<\/li>\n<li>Measuring spoons and coops (Duh)<\/li>\n<li>Fry Pan\/Skillet<\/li>\n<li>Strainer<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ol>\n<li>Drain the Can of beans and rinse the beans lightly<\/li>\n<li>Place the Beans and frozen corn in the large bowl<\/li>\n<li>Rinse, de-leaf the Cilantro before chopping\n<ol>\n<li>Personally I would also Saute the onions a bit but I&#8217;m not ahuge fan of raw onion so<\/li>\n<li>Saute the onions until lightly brown<\/li>\n<\/ol>\n<\/li>\n<li>Mix the cilantro, onions, garlic and cheese with the beans and corn<\/li>\n<li>Fill half a cup of the filling into the Tortilla (eye ball it really)<\/li>\n<li>Cook the Filled Tortilla on Medium heat until it&#8217;s brown or the cheese has melted<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>All credit for this one goes to Budgetbytes at\u00a0http:\/\/www.budgetbytes.com\/.
